Serves 4
500 gms BBQ Pork
500 gms Fresh / Dried Egg Noodles
1-2 Cups Fresh Bean Sprouts
1 Kg Pork Bones cut up by the butcher to fit saucepan
1 Bunch Shallots, Use 1/2 (green) bits for more flavor. Keep the remainder for the dish itself.
1 Star Anise
12 Steamed Dumplings
5-6 Cloves of Garlic bashed (skin on)
1 Inch knob of ginger smashed whole
1 Tbsp Light Soy Sauce
1 Tbsp Oyster Sauce
1 Tbsp Fish Sauce
1 Tbsp Palm sugar / Raw sugar
Sliced Chilli to taste / garnish
Boil 5-6 litres of cold water with the pork bones, Shallots, Ginger, Garlic until boiled, then simmer for 2hrs on low whilst skimming it every now and then. Once finished remove all solids and throw out. Keep the soup base on low and add the soy, oyster, fish sauce and sugar and stir for 30 secs.
In 4 bowls add 1 serving of noodles to each, add 3-4 dumplings, top with BBQ pork, remaining shallots and bean Sprouts then top up with soup stock.
Ready to eat - Enjoy!
