This recipe is a latest creation done whilst away at forster last weekend.
Serves 2 People.
Ingredients
6 Cooked Balmain Bugs cut into halves, clean out the yellow membrane
Basting Sauce
2 Tbsp of unsalted butter
1Tbsp of olive oil
2 Cloves garlic smashed
1Tbsp of course salt
1Tbsp of pepper corns
1Tbsp of chilli flakes
1 Tsp of raw sugar
Blend all the basting sauce in a blender or mortar and pestle ( without butter or oil ) until finely crushed.
Brush basting sauce over the white parts of bugs and let sit for 30 mins or 1 hr. On a med/high BBQ flame cook the bugs for about 2-3 mins, continue brushing with basting sauce until none left until golden.
Ready to serve with plain jasmine rice or a Greek salad.
